Coconut-Crusted Halibut with Mango Salsa


INGREDIENTS:
2 halibut fillets
½ cup coconut flour
1 cup unsweetened coconut milk
1 organic egg
1 cup unsweetened shredded coconut
1 tablespoon coconut oil 
Salt & pepper to taste 
1 mango
½ red pepper
1 lime
1 teaspoon fresh cilantro 
1 teaspoon Cumin

DIRECTIONS:
1. Put the coconut four, egg whisked with coconut milk, and the shredded coconut into 3 separate dishes/bowls.
2. Cover each piece of fish in first the flour, then egg/milk and then the coconut.
3. Sprinkle with salt and pepper to taste.
4. Heat coconut oil in a large pan on medium heat.
5. Cook the fish for about 6-8 minutes per side (depending on the thickness) until cooked through and browned on each side.
6. While fish is cooking, chop mango and red pepper into small pieces and place in bowl with fresh lime, cilantro, cumin and salt. Stir.

7. When fish is done, serve with the mango salsa on top. Enjoy!
