Veggie Fried Cauliflower "Rice"

I have another post of my favorite chicken fried rice recipe, but this one is made with cauliflower instead of rice for a lower-carb option! You can add tofu or chicken for some added protein.


Ingredients:
serves 4

1 large head of cauliflower
1/2 cup diced onions
1 cup diced bell peppers
1/2 cup diced zucchini
1 cup sliced mushrooms
1 cup diced broccoli
1/2 cup diced carrots
3 tbs ghee
2 tbs dijon mustard
1/2 cup coconut aminos "soy" sauce (you can also use Bragg's liquid aminos)
salt and pepper

Directions:

1. Heat two pans on medium with 1 tsp ghee in each.
2. Cut cauliflower into florets and place in food processor. Pulse until it's made into rice-like size.
3. Put cauliflower rice in one pan and the diced veggies in the other.
4. Cover the cauliflower and let cook for about 5 minutes, stirring half way through.
5. Stir dijon and half of the coconut aminos into the vegetables. Continue stirring.
6. Add the cauliflower rice to the vegetables and stir, mixing in the remaining coconut aminos.
7. Add salt and pepper to taste.
8. Serve and enjoy!
