Turkey & Quinoa Stuffed Peppers

Stuffed peppers are such an easy, healthy, delicious meal. I used ground turkey in this recipe but you could use any ground meat or even beans. I also used quinoa but you could use rice too.


Ingredients:
serves 4-6

1 lb ground turkey
6 bell peppers
1 cup quinoa
1 jar organic tomato sauce (no-sugar added)
1/2 cup diced onions
1/2 cup diced mushrooms
1/2 cup diced zucchini
2 cloves garlic
olive oil
basil
oregano
parsley
salt and pepper


Directions:

1. Preheat oven to 375º.
2. Boil 1 cup quinoa and 2 cups water. Once boiling, cover and reduce heat to low and simmer for 15 minutes.
3. In a large bowl, mix ground turkey, diced veggies, tomato sauce (leaving about 1/2 cup), garlic and spices (to taste)
4. Heat pan on medium with olive oil. Cook turkey mixture for just a few minutes, only partially cooking, remove from heat.
5. When quinoa has cooked for 15 minutes, remove from heat and let stand for 5 minutes.
6. Cut the tops off the peppers and remove the seeds inside.
7. Put the cut peppers, standing with cut side on top, in an oiled baking dish.
8. Mix the quinoa into the turkey mixture, using as much as you'd like, at least half.
9. Stuff each pepper with the mixture and pour remaining tomato sauce on top and around peppers.
10. Bake for 1 hour, 15 minutes or until turkey is cooked through and peppers are soft.
12. Serve and enjoy!
