Mediterranean Chicken Plate

I love Greek food, its healthy and delicious. This dish is super easy and you can make it with lamb or beef instead of chicken. This time I also made up a dairy-free Tzatziki recipes, most recipes are complicated and take many hours, but this fast and easy version is still really yummy.


Ingredients:
serves 2-3
1 lb organic chicken breasts, diced
1 cup rice
1 cup diced zucchini 
1 cup diced bell peppers
1/2 cup diced onions
1 tbs olive oil
1 tsp basil
salt and pepper
1 tbs ghee
organic hummus (or make your own with this recipe from simplyrecipes)

Tzatziki Ingredients: 
serves 4
1 cup unsweetened coconut yogurt
1/2 English cucumber, peeled and diced small
3 cloves garlic, minced
1 tsp white vinegar
1/2 tbs extra virgin olive oil
1 too fresh dill
salt and pepper to taste


Directions:

1. Bring 1 cup rice and 2 cups water to a boil, then cover and reduce to low, simmer for 45 minutes. 
2. In the mean time, make the Tzatziki. Add all ingredients to a boil and stir (yep, that easy!). Keep on fridge until ready to serve.
3. After about 25 minutes, heat olive oil in large pan on medium.
4. Add onions to pan and sauté for a few minutes, then add in the chicken, stirring occasionally.
5. Add the other veggies to the pan, add basil, salt and pepper to taste.
6. Remove rice from heat (after 45 minutes) and let sit for 5 minutes. 
7. Cook chicken and veggies until browned, stirring occasionally. 
8. Fluff rice with fork and mix in ghee.
9. Serve chicken and veggies over rice, with some hummus and tzatziki. Enjoy!
