Chicken Salad

I love making chicken salad sandwiches when I have leftover chicken. This recipe is super simple and delish.


Ingredients:
makes 2-3 servings

2 cups diced organic chicken breast
1 stalk celery, diced
2 scallions, sliced
1 tsp finely chopped fresh dill
1 tbs finely chopped parsley
1/2 cup mayo or veganaise
1 tsp fresh lemon juice
1 tsp dijon mustard
1 tsp salt
1/2 tsp pepper

Directions:

Mix all ingredients in a bowl and spread onto toasted gluten-free bread. Top with avocado, tomato, pickles and lettuce. Enjoy!
