Grain-Free Bagels

These bagels are made with almond flour and are surprisingly simple to make. I like to fill mine with blueberries, bananas, cinnamon, etc. You can also get "Everything Bagel" seasoning too! I love topping mine with ghee or some vegan cream cheese (my fave is from Kite Hill).


Ingredients:
makes 6 bagels

2 cups almond flour
1 tbs baking powder
1 tsp salt
3 eggs
3 cups shredded vegan mozzarella (I love this one by Miyoko's)
5 tbs vegan cream cheese (my fave is from Kite Hill)
blueberries, bananas, cinnamon, bagel seasoning, etc

Directions:

1. Preheat oven to 450º.
2. In a mixing bowl, combine almond flour, baking powder and salt.
3. Heat the mozzarella and cream cheese in a pot on medium until melted, stir to mix.
4. Add the cheese and two of the eggs to the flour mixture and mix until well combined.
5. Divide the dough into balls of 6 equal portions and place on a parchment paper lined baking sheet.
6. Add your mix-ins, berries, etc to each bagel (I like to make a mixture, maybe two plain, two blueberry, two banana, for variety).
7. Roll each ball in your hands and then stick your finger through the center, creating a hole. Form dough into a bagel shape on the parchment paper.
8. Crack the remaining egg into a small bowl and whisk. Brush the egg on to the top of each bagel. Sprinkle the top of the bagels with salt, cinnamon or any other seasoning.
9. Bake for about 15 minutes or until golden brown and cooked through.
10. Enjoy with some ghee, vegan cream cheese or sugar-free jam!
