Cabbage Rolls

My Nana made cabbage rolls for our family all the time, they were one of my favorites. My aunt made a cookbook with all of my Nana's favorite family recipes before she passed away. This is her recipe, they're super easy and super delicious. You could use ground turkey, chicken or pork instead of the beef. You could also use quinoa instead of rice.


Ingredients:
serves 4

1 head green cabbage
1 lb organic ground beef
1/2 cup uncooked brown rice
1 jar tomato sauce
1/2 jar tomato juice
1 onion
2 tbs ghee
salt
pepper


Directions:

1. Bring 1 cup of water to a boil and stir in 1/2 cup rice. Reduce heat to low and simmer for 45 minutes.
2. Cut stem out of cabbage and steam cab until the leaves are soft and easily peel off.
3. Preheat oven to 350º.
4. While rice is cooking and cabbage is steaming, sauté ghee and diced onions on medium heat. Add the tomatoes sauce and juice to the onions. Mix in salt and pepper, to taste. 
5. When rice is done, mix beef and rice in a large bowl. Add a few spoonfuls of the tomato sauce to the bowl and mix with hands. 
6. Peel about 10 leaves off the head of cabbage and cool.
7. Put a large spoonful of the beef and rice mixture into a cabbage leaf and fold, covering the mixture into a roll. 
8. Put a layer of the tomato sauce onto a large baking dish. Place each cabbage roll into the baking dish. 
9. When all the beef and rice has been used up, pour the remaining tomato sauce over the cabbage rolls. 
10. Cook for 1.5 hours. 
11. Serve with a side of veggies and enjoy!
