Asian Beef & Broccoli

This simple, yet delicious dish is Asian-inspired, but so much better than Chinese takeaway. You could make it with chicken instead of beef and quinoa instead of rice, if you prefer.


Ingredients:
makes 4 servings

1 lb grass-fed steak or beef
1 cup brown rice (uncooked)
4 cups brocoli florets
3 cloves garlic, minced
1/2 yellow onion, diced
1 shallot finely chopped
2 tbs coconut or almond flour
3/4 cup water
1/3 cup Bragg's Liquid Aminos (soy sauce alternative)
1 tsp ginger
1/8 tsp crushed red pepper flakes (more or less for spiciness level)
olive oil


Directions:

1. Combine 1 cup rice and 2 cups water in a pot and bring to a boil. Then cover and turn to low, simmer for 45 minutes.
2. Dice the steak into small pieces.
3. Heat olive oil over medium high heat and cook the steak, turning occasionally, until browned.
4. Remove the steak and set aside.
5. In the same pan, cook the onions, garlic and shallots, adding more olive oil if necessary.
6. Add the broccoli to the pan, cover and cook for about 5 minutes.
7. In a bowl, combine flour and water and mix until there are no lumps.
8. Add the soy sauce, ginger and crushed red pepper to the bowl and mix.
9. Uncover and add the sauce to the pan, cook for about 5 minutes.
10. Once the rice has been cooking for 45 minutes, remove from heat and let stand 5 minutes or until water has absorbed.
11. Add the steak back to the pan and cook fore another 2-3 minutes.
12. Fluff rice with a fork and mix in 1 tbs ghee,
13. Serve the beef and broccoli over the rice and enjoy!
