Zucchini Pesto Pasta with Chicken

Making noodles with a sporalizer is so easy and delicious. My favorite noodles is zucchini but there's so many others you can try, beets, sweet potato, butternut squash. And pesto is really my favorite pasta sauce. Typically they have cheese, but I was able to find one that uses cashews instead of parmesan and it's so amazing.


Ingredients:
serves 2

2 large zucchinis
2 organic chicken breasts, diced
2 cups spinach
2 tbs fresh basil, chopped
1/4 cup sun-dried tomatoes, chopped
1/2 cup onion, diced
3 tbs dairy-free pesto
olive oil
salt
pepper


Directions:

1. Spiralize the zucchinis into noodles and set aside.
2. In a large pan, heat olive oil over medium heat.
3. Add onions and chicken and cook, stirring occasionally.
4. When chicken is almost fully cooked, about 5 minutes, add in spinach, basil, sun-dried tomatoes and zucchini noodles.
5. Cook, stirring occasionally, until noodles are soft, just a few minutes. Add in pesto and stir.
6. Season with salt and pepper to taste and serve. Enjoy!
