Walnut-Crusted Halibut

Halibut is probably my favorite fish, so light and flaky. I wanted to try something different so I crusted it in walnuts and it turned out pretty tasty. You could use almonds or whatever instead of walnuts if you wanted.



Ingredients:
serves 3-4

1 lb fresh Halibut
1/2 cup raw walnuts
1/4 cup coconut flour (or almond flour)
1 tbs Dijon mustard
1 tbs balsamic vinegar
2 tbs thyme
1 organic egg
2 tbs olive oil
1 lemon
salt
pepper

Directions:

1. Preheat oven to 400º.
2. Put walnuts in a zip-loc bag and hit with a mallet to break walnuts into very small pieces.
3. Place walnuts on a dish, mixed with the thyme.
4. On another dish, put the flour with salt and pepper.
5. On a third dish, put the egg, lightly beaten, with the Dijon and balsamic mixed in.
6. Put the olive oil in a skillet on medium heat.
7. Dip one side of the halibut, first into the flour mixture, then the egg and then the walnuts, pressing so they stick.
8. Cook fillets, walnut side down, in skillet for about 4 minutes or until walnuts are toasted.
9. Place fish in a baking dish and bak in oven for 5 minutes.
10. Serve with lemon wedges, some mashed sweet potatoes and collard greens. Enjoy!
