Strawberry Balsamic Salmon

Salmon is full of essential omega-3 fatty acids so I try to eat it at least once a week. I made this recipe up last night when I had a craving for strawberries. The balsamic vinegar and goat's brie blend with the strawberries to create a delicious sauce. If you don't do goat's cheese you can use vegan cheese or just omit the cheese, it will still taste great.



Ingredients:
Serves 2

1 lb fresh wild salmon
2 tbl balsamic vinegar
2 sliced strawberries
4 slices goat's cheese brie
olive oil
salt
pepper


Directions:

1. Preheat oven to 425º.
2. Rinse and pat dry salmon. Place in oiled baking dish and cover in balsamic vinegar. Marinate for about 10 minutes.
3. Bake salmon for 15 minutes.
4. Take salmon out of oven and place cheese and strawberries on the top. Using a spoon, drizzle any balsamic in bottom of the pan over the salmon.
5. Return the dish to the oven and bake for 5 more minutes or until fish is cooked through.
6. Serve with a side of roasted veggies. Enjoy!
