Roasted Chicken & Veggies

Such a simple dinner, roasting a chicken and veggies in the oven. And it tastes so good!


Ingredients:
serves 4

1 5 lb whole organic chicken
2 sweet potatoes
1 cup diced onion
4 carrots
4 celery sticks
6 asparagus
olive oil
basil
oregano
thyme
rosemary
salt
pepper


Directions:

1. Preheat oven to 350º. Put chicken in a roasting pan.
2. Add about 1 inch of water to the bottom of the pan. 
3. Cut vegetables in large pieces and add to the pan. 
4. Cover chicken with olive oil and all spices, salt and pepper. 
5. Cook for about 1 1/2 hours, or until cooked through. Carve and enjoy!
