Mashed Cauliflower

Mashed cauliflower is a great alternative to mashed potatoes and are super simple to make. I like seasoning mine with paprika and adding some goats cheese, you can use vegan cheese or omit it, either way they're delicious.


Ingredients:
serves 4

1 head cauliflower
1/2 cup shredded goat's milk cheddar (or vegan cheese)
paprika
salt
pepper

Directions:

1. Cut cauliflower into small florets.
2. Put cauliflower in a large pan and cover with water.
3. Heat to boil, then cover and reduce heat to medium.
4. Simmer for about 10-15 minutes or until cauliflower is soft.
5. Drain water. Mash cauliflower with a potato masher. Then stir with large spoon.
6. Mix in shredded cheese.
7. Add salt and pepper.
8. Serve with paprika sprinkled on top. Enjoy!
