Lemon Garlic Dijon Shrimp

I love shrimp. I don't think I had ever cooked them before last night. I used to love the shrimp from Benihana, dipped in their mustard sauce, so I tried recreating a healthy version of that. And they turned out so delicious!!


Ingredients:
serves 2-3

1 lb fresh shrimp (peeled)
3 tbs ghee
1 tbs olive oil
2 tbs dijon mustard
1 clove garlic (minced)
1/2 lemon
2 tbs basil
salt
pepper
1 cup quinoa

Directions:

1. First cook the quinoa. Put 1 cup quinoa and 2 cups water in a pot and bring to a boil. Once boiling, turn heat to low and simmer, covered for 15 minutes.
2. While quinoa is cooking, make the sauce. Melt the butter in a small sauce pot.
3. Remove pot from heat and add the other ingredients and stir.
4. Put shrimp in a large bowl and cover with the sauce. Let marinate for about 10 minutes.
5. Once the quinoa has been cooking for 15 minutes, remove form heat, cover and let stand for 5 minutes.
6. Heat a cast iron or frying pan on medium. Sauté the shrimp for about 5 minutes, turning halfway through, or until cooked (they will turn pink and white when cooked through).
7.  Fluff quinoa with a fork and stir some olive oil into the quinoa.
8. Place shrimp and sauce over quinoa. Squeeze some more lemon on top. Serve with a side of roasted or steamed veggies. Enjoy!
