Grain-Free Chicken Nuggets

Sometimes all you need is some comfort food. My go-to is chicken nuggets made with coconut flour, simple and quick, yet delicious. You could also use almond flour, or any gluten-free flour you like.


Ingredients:
serves 3-4

2 organic chicken breasts
1/4 cup coconut flour
1 egg
2 tbs coconut oil
salt
pepper


Directions:

1. Heat a large pan with coconut oil on medium.
2. Cut chicken into small pieces.
3. Beat egg in a bowl and soak the chicken in the egg.
4. Place flour, spread out, on a plate with salt and pepper.
5. Cover each chicken piece with flour, shake off any excess flour.
6. Cook chicken in pan, about 8 minutes, turning halfway through, until cooked through.
7. Serve with ketchup (I use a low-sugar, organic ketchup from Whole Foods), Dijon mustard, or any dipping sauces you like, and sweet potato fries and veggies. Enjoy!
