Egg & Avocado Tortilla

I eat a lot of eggs. They're high in protein and omega-3's and there's so many different ways you can eat them. This is one of my favorites.


Ingredients:
serves 1

1 Siete Tortilla (I like the almond flour one. Or any gluten-free tortilla)
2 organic eggs
1/4 cup diced onion
1/4 cup diced zucchini
1/4 cup diced yellow squash
1/4 cup diced bell peppers
1/4 cup sliced mushrooms
1 cup spinach
1/2 an avocado
coconut oil
salt
pepper

Directions:

1. Heat a tbs olive oil in a pan on medium heat.
2. Cook diced veggies except spinach.
3. While veggies are cooking, heat another pan on medium and add coconut oil.
4. Crack eggs and cook in pan until cooked to desired amount (you may want to cover pan with a lid to fully cook the eggs). 
5. Add spinach into veggies , mix and cook all until soft. 
5. Place tortilla on a plate and add veggies on top. Put eggs on top of the veggies and then top with avocado. 
6. Add salt and pepper to taste and enjoy!
