Blueberry Muffins

These muffins are sugar, grain and dairy free and are pretty delicious. You could also use dark chocolate chips or another type of berry if you want. I eat them for breakfast or as a snack.


Ingredients:
makes 12-16 muffins

1 cup coconut flour
1 cup coconut milk
1/2 cup shredded unsweetened coconut
1 tsp baking soda
3 dates (pitted)
6 eggs (or use flax as egg replacement)
1/4 cup coconut oil (melted)
4 tsp vanilla extract
1/4 cup chia seeds (optional)
1 cup fresh blueberries
1 tsp pink salt

Directions:

1. Preheat oven to 350º.
2. In a bowl, mix flour, baking soda and salt.
3. In another bowl, whisk eggs, milk, coconut oil and vanilla.
4. In a food processor or blender, blend dates until they make a paste.
5. Stir wet ingredients and dates into dry ingredient bowl.
6. Mix in the chia seeds and then the blueberries.
7. Fill greased or lined muffin tin to about 3/4 of each cup.
8. Bake for 25 minutes. Enjoy!
