Stuffed Portobello

You can stuff portobello mushrooms with pretty much anything you want. This is a simple, tasty recipe that I like to make often. But you can try it with different kinds of meat (lamb and beef are great too) and with any veggies.


Ingredients:
makes 2 servings

2 portobello mushrooms
1 lb organic lean ground turkey
1/2 chopped onions
1/2 cup chopped bell peppers
1 cup chopped spinach
4 sliced sun-dried tomatoes
2 garlic cloves
fresh basil
oregano
salt
pepper
olive oil


Directions:
1. Heat oven to 450º.
2. Sauté onions over medium heat with olive oil.
3. Add in turkey and stir/chop until turkey is in pieces.
4. When turkey has browned, add in veggies, sun-dried tomatoes, garlic basil, oregano, salt and pepper.
5. Cook, staring occasionally until veggies are soft.
6. On greased baking sheet, place mushrooms, cap side down, with stem cut out.
7. Fill mushrooms with the meat and veggies. Top with vegan or goat's cheese.
8. Place in oven and bake for 10 minutes or until mushrooms are soft.
9. Serve with a side of steamed veggies. Enjoy!
