Sea Bass Piccata with Roasted Veggies & Sweet Potato Mash

Eating lots of fish is great for PCOS, especially fatty ones like salmon and tuna. But when I want a break from those, I love sea bass. I made this dish last night and it turned out pretty great. You could use any fish with it and of course pair it with any sides you like.


Ingredients:
makes 2 servings

1 lb Sea Bass (or fish of choice)
2 tbs ghee
1 tbs coconut oil
2 tbs olive oil
2 tbs capers
1 garlic clove minced
1 lemon
1 cup brussels sprouts (cut in half)
1/2 cup zucchini (sliced)
1/2 cup yellow squash (sliced)
1/2 cup asparagus (cut in pieces)
1/2 cup onion (diced)
1 sweet potato
1/4 cup unsweetened almond or coconut milk
fresh basil
salt
pepper

Directions:
1. Preheat oven to 450º
2. Mix all veggies with olive oil, salt, pepper and basil and put in baking dish.
3. Put veggies in oven and set timer for 20 mins.
4. Peel skin off sweet potatoes, cut into 2-inch pieces and put in steamer. Put heat to high and steam for 10 mins.
4. Rinse and pat dry fish and top with salt and pepper.
5. In frying pan, heat coconut oil  on medium/high, fry sea bass 3-4 minutes on each side until browned.
6. Place fish on baking sheet and put into oven for 8-10n mins or until cooked through.
7. To make sauce, add 1tbs ghee, capers, garlic and lemon in small saucepan. Heat on medium for 4 mins.
7. Once soft, mash potatoes and add almond or coconut milk and 1 tbs ghee, mix until smooth.
8. Remove fish and veggies from oven.
9. Drizzle sauce on fish and serve. Enjoy!
