Mint Chip Smoothie

Smoothies are a great way to get lots of veggies and protein, but it's hard to make ones that are PCOS friendly because most have bananas (which are way too much sugar). I made this smoothie up yesterday when I was craving mint chip ice cream and it turned out so good.


Ingredients:
makes 1 serving

1 avocado
1 scoop vanilla protein powder
1/4 cup cacao nibs
1/4 cup raw cashews
1 cup spinach
1 pitted date (add more if you want it sweeter)
1 cup unsweetened coconut or almond milk
1/4 tsp peppermint or mint extract
4 ice cubes

Directions:

Put all ingredients in blender and blend until smooth. Enjoy!
