Grain-Free, Sugar-Free Breakfast Bowl

Breakfast, especially fast breakfast, is a tricky one on the PCOS diet. At first I ate gluten-free oats, then quinoa flakes, but when I tried to cut back on all grains I made this recipe up and now it's my go-to every morning. You can change up what you put on top to get some variety too. I also like to change up the chia seeds for hemp hearts, just to mix it up!


Ingredients:
1 serving

2 tbs ground flax
2 tbs chia seeds (or hemp hearts)
1/2 cup unsweetened almond or coconut milk (or use both)
1 tbs pumpkin seeds
1/4 cup chopped raw walnuts (or any nut you like)
1/2 cup berries (I like blueberries, strawberries and raspberries best)
1 tbs coconut flakes
1 tbs cacao nibs
1 tsp ceylon cinnamon

Directions:
1. Put flax and chia in bowl and  stir with coconut or almond milk.
2. Add in pumpkin seeds and walnuts.
3. Slice strawberries and add in, along with blueberries and raspberries (or whatever berries you like. I use berries to keep it low glycemic, you can also use green apples).
4. Sprinkle coconut flakes, cocoa nibs and cinnamon.
5. Stir in a bit more milk to get the right ratio. And enjoy!
