Grain-free, dairy-free pizza!

I thought for my first recipe I'd do a pizza, because who doesn't love pizza? It was probably the hardest food to give up when I started the PCOS diet, but alternatives like this help me deal with pizza cravings. The key to this pizza is a grain-free tortilla from Siete, I love their almond flour ones, but they also have coconut and cassava flour ones as well. I also love this vegan mozzarella cheese from Mikyoko's Kitchen, it's made out of cashews and it's so delish, I can't get enough!!

Ingredients:

2 Siete Tortilla (or any gluten-free tortilla or wrap)
1/2 cup cherry tomatoes
1 cup diced onions, bell peppers and zucchini
1 cup spinach
1 clove garlic
1/4 cup Miyoko's Fresh VeganMozz (or any vegan cheese)
4 pieces of organic bacon (or any meat for protein)
fresh basil
coconut oil
virgin olive oil
salt
pepper






Directions:
1. In a frying pan, cook your protein (I love these with bacon, but they're also fab with chicken breast). Anything works, as long as it's organic!
2. In another pan on medium/high heat, sauté the veggies in some coconut oil, add spinach in at the end.
2. And in one more pan, sauté the cherry tomatoes (cut in half) and minced garlic in olive oil. Once they are cooked, smash into a paste with a potato masher.
3. Peheat oven to broil.
4. Once everything is cooked, put the tortilla on a baking sheet and spread the tomato paste onto them. Then add the veggies and meat. On top, add the vegan cheesed some fresh basil.
5. Broil the pizzas in the oven for about 3-5 minutes, until cheese is melted and tortillas have started to brown.
6. Cut into slices and enjoy!

You can of course experiment with different toppings. I like to also do a chicken pesto pizza, with some goats cheese and sun-dried tomatoes. Bon appétit!
