Grain/Dairy/Sugar-Free Coconut Flax Blueberry Pancakes

I usually have chia/flax cereal for breakfast, but today I felt like mixing it up. Pancakes is one thing that I started to miss, so I began making these once in awhile and they're pretty yummy if you ask me! You could add in some dark chocolate chips, bananas, or whatever you like, I like to use blue berries (they're so delicious, nutritious and they're low glycemic). Since maple syrup is too much sugar for us PCOSers, I make my own berry sauce, I actually prefer it to maple syrup.

Ingredients: 
makes about 6 pancakes

3 eggs
1/4 cup ground flaxseed
1/4 cup coconut flour
1/2 cup unsweetened coconut or almond milk
1/4 cup coconut flakes
1/4 tsp aluminum-free baking soda
1/2 tsp baking powder
1 tsp vanilla extract
ceylon cinnamon
coconut butter
coconut oil
1 cup fresh berries

Directions:
1. Heat large frying pan on medium and add a spoonful of coconut oil.
2. Mix together all ingredients except the coconut butter, coconut oil and berries.
3. When pan is hot, pour 1/4 cup of the mixture onto the pan, creating 4 round pancakes.
4. Add blueberries to each pancake (I usually do 5 berries per pancake).
5. In a small saucepan, heat a spoonful of coconut oil on medium heat.
6. Add sliced strawberries, raspberries and blueberries (or whatever berries you like) and sauté and stir occasionally, until soft and a sauce is made.
7. Flip pancakes when they start to bubble on the top and the bottom is browned.
8. I like to keep the finished pancakes warming in the oven while I cook the rest of the batch.
9. When finished, top with coconut butter, cinnamon and fresh berry sauce.
