Gluten/Dairy/Sugar-Free Brownies

Finding desserts on the PCOS diet is hard, but I put some recipes together and made these buckwheat chocolate brownies and now they're my new fave. You can add different kinds of nuts in them for variety. And if you want them sweeter, just use more dates. I just use two because I think it makes them the right amount of sweet but still very low sugar.



Ingredients:
makes 9 brownies

1/4 cup buckwheat flour
1/4 cup cacao powder
1/3 cup applesauce
2 tbs coconut flakes
1 tbs vanilla
1/2 tsp pink salt
3 tbs coconut oil
2 dates (pitted)
1/4 cup raw walnuts (chopped)
3 tbs unsweetened coconut or almond milk
coconut cream for topping
cinnamon

Directions:

1. Preheat oven to 350º.
2. In large bowl, mix together flour, cocoa, applesauce, vanilla, salt, coconut oil, milk and walnuts.
3. In a food processor, blend dates and then add them in to mixture.
4. Grease an 8X8 inch glass baking dish.
5. Pour batter into dish and spread evenly.
6. Bake for 20 minutes.
7. Cut into 9 squares.
8. Top with a dollop of coconut cream and sprinkle with cinnamon. Enjoy!
