Fried Apples & Goat's Brie

I made this sweet and savory dessert last night and it was pretty delicious, even my husband raved. If you don't eat goat's cheese, you can use vegan instead. Make sure to use lots of cinnamon (it lowers blood sugar)!


Ingredients:
2 servings

2 grain-free Siete tortillas (my fave is the almond flour one)
1 organic green apple
1/2 of a round of goat's brie cheese (I find it at Whole Foods)
1 pitted major date
ceylon cinnamon
coconut oil

Directions:

1. Heat a tbs on medium in a large frying pan.
2. Dice apples and add to pan, sprinkle with lots of cinnamon, stirring constantly.
3. When apples are soft, remove from pan and set aside.
4. Add more coconut oil and place tortillas on the pan.
5. Put slices of goat's cheese on one half of each of the tortillas, then add the cooked apples and diced dates.
6. Cook until cheese is melted.
7. Fold tortilla in half and sprinkle with some more cinnamon on top. Serve and enjoy!
