Dark Chocolate Peppermint Fat Balls

I first heard of fat balls from Lee Tilghman (@leefrommerica on instagram, she reversed her PCOS with diet) and was excited to try these balls made of healthy fats, nuts, coconut butter and oil, cocoa, and more. I tried her coconut fat balls and liked them a lot. Then I tried some from Jess (@shutthefigup on instagram), hers were chocolate peppermint flavored and I fell in love. I changed her recipe a bit to make it my own. You can play around with the type of nuts you use to give them a different taste.


Ingredients:
makes about 18-20 1inch balls

1/2 cup raw almonds
1/2 cup raw cashews
1/2 cup raw walnuts
1/3 cup raw brazil nuts
1/4 cup cashew butter (or almond)
1/4 cup unsweetened shredded coconut
1/4 cup coconut butter
1 tbs coconut oil (softened or melted)
1/4 cup unsweetened cacao powder
1/2 cup ground flax
1 tsp ceylon cinnamon
1/4 teaspoon peppermint oil
1/4 tsp pink salt

Directions:

1. Mix all ingredients together in a food processor until combined. If the mixture is too watery you can add more flax and add more coconut oil if too dry.
2. Roll large spoonfuls of batter into balls and place on wax paper in a container with a lid.
3. Put in freezer and freeze until hard.
4. Enjoy!
