Creamy Dill Salmon
This dairy-free sauce gives salmon a delicious Mediterranean flair. I try to eat salmon a couple times a week, it's full of essential omega-3 fatty acids and is just so yummy!
Ingredients:
1 lb fresh wild Salmon fillets
3 tbs unsweetened coconut yogurt
1 tbs Vegenaise
1 lemon
2 tbl fresh dill
salt
pepper
Directions:
1. Preheat oven to 400º.
2. Mix coconut yogurt, Vegenaise, squeeze 1/2 of the lemon, dill, salt and pepper.
3. Rise and pat dry salmon and set in greased baking dish.
4. Top salmon with mixture and add a few thin lemon slices on top.
5. Bake for about 20 minutes or until salmon is cooked through.
6. Serve with steamed, sautéed or roasted veggies. Enjoy!
