Choc Chip Cashew Coconut Walnut Cookies

It's hard to find desserts that are "allowed" on the PCOS diet. I love using dates to sweeten. These cookies are sugar, dairy and grain free! Feel free to use different nuts for a different taste.


Ingredients:
makes 12 cookies

1/2 cup cashew butter
5 dates (pitted)
1 egg
1/2 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
3/4 cup cacao nibs or dark chocolate chips
1/4 cup chopped walnuts
1/4 cup coconut flakes

Directions:
1. Preheat oven to 350º.
2. Blend egg and dates in food processor until smooth.
3. Put the mixture into a bowl and add in the cashew butter.
4. Stir in the baking soda, vanilla and salt.
5. Mix in the cacao, walnuts and coconut.
6. Place spoonfuls of the batter onto a parchment paper lined cookie sheet.
7. Lightly flatten the balls with your fingers or a spoon.
8. Bake for 10-12 minutes.
9. Serve with almond or coconut milk and enjoy!
