Baked Veggie Halibut

I love halibut, it's probably my favorite fish. So light and flakey. But because it's so light I like to have it with some kind of sauce. This time I made a tomato, zucchini, onion, garlic and basil sauce and it turned out so yum! Serve it with a side of roasted veggies and mashed sweet potatoes for one superb meal.



Ingredients:
makes 2 servings

1 lb Halibut steaks
1/2 cup diced onion
1/2 cup diced zucchini
1 cup halved cherry tomatoes
1 clove chopped garlic
fresh basil
1 tbs olive oil
salt
pepper

Directions:

1. Preheat the oven to 450º.
2. Heat the olive oil over medium heat in a small frying pan.
3. Cook the garlic, onion and zucchini until tender.
4. Remove the pan from the heat and add the tomatoes, basil, salt and pepper.
5. Place halibut in greased baking dish and cover with the veggie mixture.
6. Bake for 15 minutes or until fish is cooked through.
7. Serve with roasted veggies and mashed sweet potatoes. Enjoy!
