Apple & (Goat's) Brie Chicken

Giving up cheese for the PCOS diet is definitely one of the hardest parts. Brie is my fave so I was thrilled when I found some at whole foods made from goat's cheese. And, the best part is that it tastes exactly the same! I don't have any other dairy, but I do still eat goat's cheese, most people say it's OK to have on the PCOS diet. So if you do too then you have to try this apple and brie chicken recipe!

Ingredients:
makes 2 servings

2 organic chicken breasts
6 slices of green apple
3 slices of goat's Brie cheese
2 cups brussels sprouts
2 sweet potatoes
1/4 cup unsweetened almond or coconut milk
olive oil
fresh basil
salt
pepper

Directions:
1. Preheat oven to 400º.
2. Cover chicken breasts in olive oil and put in baking dish, sprinkle with salt, pepper and basil. Bake for 25 mins.
3. Cut brussels sprouts in half and toss with olive oil, salt and pepper, place on baking sheet, cut side up. Sprinkle paprika on each sprout and place in oven.
4. Peel potatoes and dice into 2-inch pieces. Steam for 10 minutes or until soft.
5. Remove chicken from oven and add sliced apples and cheese on top. Set oven to broil and cook for 5 minutes, until cheese and apples are slightly browned.
6. Mash potatoes, add ghee and almond or coconut milk and mix until smooth.
7. Remove chicken and brussels from oven and serve. Enjoy!
